Spicy Chickpea Salad

 


Ingredients:

  • 1 cup cooked chickpeas (240g)
  • 1 medium cucumber, diced (150g)
  • 1 medium tomato, diced (150g)
  • 1/4 red onion, finely chopped (50g)
  • 1/4 cup fresh cilantro, chopped (15g)
  • 1 tablespoon olive oil (15ml)
  • 1 tablespoon lemon juice (15ml)
  • 1 teaspoon cumin powder (2g)
  • 1/2 teaspoon chili powder (1g)
  • Salt to taste

Kitchen Tools Needed:

  • Large mixing bowl
  • Small mixing bowl
  • Whisk
  • Chopping board
  • Knife

Instructions:

  • In a large bowl, combine the cooked chickpeas, diced cucumber, diced tomato, and chopped red onion.
  • Add the chopped cilantro to the bowl.
  • In a small bowl, whisk together the olive oil, lemon juice, cumin powder, chili powder, and salt.
  • Pour the dressing over the salad and toss well to combine all ingredients.
  • Let the salad sit for 10 minutes to allow the flavors to meld before serving.
