Spicy Chicken and Potato Hash

 


Ingredients:

  • 2 medium potatoes, diced
  • 1 jalapeno, finely chopped
  • 1 medium onion, chopped
  • 1 medium tomato, diced
  • 200g chicken breast, diced
  • 2 tablespoons canola oil
  • 1 lemon, juiced

Instructions:

  • Heat the canola oil in a skillet over medium heat on the stove top.
  • Add the diced potatoes and cook for about 5 minutes until they start to soften.
  • Add the chopped onion and jalapeno to the skillet, cooking for another 3 minutes until the onion is translucent.
  • Stir in the diced chicken and cook until the chicken is browned and cooked through, about 5 minutes.
  • Add the diced tomato and lemon juice, stirring to combine, and cook for an additional 2 minutes.
  • Season with salt and pepper to taste before serving.
