Spicy Chicken and Vegetable Scramble
Ingredients:
- 2 Eggs
- 1 medium Tomato, chopped
- 1 medium Potato, diced
- 1 small Onion, chopped
- 1 tablespoon Canola Oil
- 2 Green Chillies, chopped
- 100g Chicken, diced

Instructions:
- Heat the canola oil in a skillet over medium heat on the stove top.
- Add the diced potatoes and cook for about 5 minutes until they start to soften.
- Add the chopped onion and green chillies, sautéing until the onion is translucent.
- Stir in the diced chicken and cook until it's no longer pink, about 3-4 minutes.
- Add the chopped tomato and cook for another 2 minutes until everything is well combined.
- Crack the eggs into the skillet and scramble everything together until the eggs are fully cooked, about 2-3 minutes.
- Season with salt and pepper to taste, and serve hot.
