Quinoa and Black Bean Bowl
Ingredients:
- 1 cup cooked quinoa (approximately 185g)
- 1 cup black beans (approximately 172g)
- 1/2 avocado (approximately 100g)
- 1/4 cup diced bell pepper (approximately 30g)
- 1/4 cup chopped cilantro (approximately 15g)
- 1 tablespoon olive oil (approximately 15g)
- 1 tablespoon lime juice (approximately 15g)
- Salt and pepper to taste

Instructions:
- In a large bowl, combine the cooked quinoa and black beans.
- Add the diced bell pepper and chopped cilantro to the bowl.
- In a small bowl, whisk together the olive oil, lime juice, salt, and pepper.
- Pour the dressing over the quinoa and bean mixture and toss to combine.
- Slice the avocado and place it on top of the bowl before serving.
